Is this a high school or elementary school?
If it is a high school the best solution is to create hidden shares for each student. Give them the same name as the student's user ID. Do not use the default user directories create by the NT Server User Manager since it creates a pseudo-share that is useless especially with Win9x clients. Then attach this student directory at logon. Then change the local registry so the default save location in office is this mapped drive. (Also change the backup save location to this maped drive.) This way students can never see or access work saved by another student.
Elementary schools often do not use individual student IDs & for this reason the strategy is different.
I am not sure that changing the registration info will get you what you want. It is not clear to me why you want this. You do know that changing the initials embedded in the document is easy to do. Also, students will quickly learn to cut & paste instead of outright copying.
