don't know where you did find that...
anyway, associated file extension does nothing to files. probably just mixes something up in client side.

there is in the protocols (5.5 sp4) for every protocol setting that says what encoding should be used.
there select mime provide as text and see that html is unselected.
also, uttleast imap4 has selection for using exchange rtf.
