Aha! Thanks Sealeopard.
For some reason though, set-mailbox is not a valid command when Powershell.exe is run as above. There must be some kind of exchange paramter that is run with powershell.exe when you run the Exchange Management Shell that enables all the exchange commands. I'll see if I can find the answer and post it here...
