SIM from HP is definately a tool I'll be implementing.
Not sure though it'll give me a "one-window" overview of the performances of ALL my servers.

The OpManager Pielie recommended looks promissing too...

I'll throw in another vote for OpManager. Uses both SNMP and WMI and the free version can keep an eye on 20 different devices (with any variation of monitors).

We've also used Servers Alive for basic alerting (easy and reliable) and some WMI scripts for data collection.
