We use MRTG, but unless you are good with MIBS it can be a real PIA to set up.
Then again there is always Perfmon

There is also a fairly inexpensive product from GFI called GFI Network Server Monitor. A collegue of mine uses it and is fairly satisfied. It can page you when certain events occur. www.gfi.com
(P.S. I also use there spam filtering "MailEssentials and MailSecurity". It does a fair job. It'll do better once I integrate with Exch2003)
